Mmm

I made butternut squash macaroni and cheese for the kids and I...and it is so good.

The first bite made me think I was eating the creamy onion soup from Outback Steakhouse. *drool*

We're having ettouffe for dinner, and I think I see a pineapple upside down cake in our future....

You should make it! It came out awesome. I did it just like the recipe said, except I used whole milk instead of half n half, and fresh squash instead of frozen (baked beforehand, and we just ate what was leftover).

What did you end up thinking of the minestrone, and did you ever do the stew?

I love, love, love the minestrone. I made the stew and was kinda eh about it. I liked it but it was kinda weird. I'm used to beef stew being more like dinty moore beef stew. And it was a bit spicy for me, though good. Rob didn't really like it. He's such a pain in the rump to cook for. It drives me nuts and makes cooking not at all exciting. I'm definitely trying that mac and cheese though. If I can get the boys eating that, it adds a veggie they wouldn't normally eat so that would be great!

I have it on my menu to make for tomorrow night. I had Rob look over the menu and he said "butternut squash with mac and cheese? how do those go together?" in a yicky tone. I told him not to worry about it. lol

Really, it kind of assimilates in. By the time you're adding the cheeses there are very few discernible chunks at all, and you could break them up if you wanted to.

Grant was so not into the idea, and he ate two bowls. I hope Rob will try it, because that will probably be enough :)
